Somthing new for you...

Thank you for your concern, I am okay, just bewildered. So I wanted to change the pace back to something happy... something yummy...instead.

I don't think I have posted a recipe before and I have had two requests for copies in the last week so here they are.

My mom used to make "cowboy potatoes" while I was growing up and it was one of those things that I thought everyone just enjoyed. I have since found out that a lot of you don't know what they are. Pure comfort food yumminess. So here it is...

Cowboy Potatoes

2 large baking potatoes
six slices of bacon
diced onion
fresh mushrooms
margarine or butter
cream of mushroom soup
chunks of cheddar cheese

This is the fancy version of this side dish. I rarely make it this involved. Mine always has potatoes, butter, cream of mushroom and cheese, but every once in a while I will add this or that as well.

Cube up the baking potatoes into 1 inch squares. (Sometimes I peel the potatoes, sometimes I don't. It's what you like.) Place them in the skillet and fry with the butter, turning them as each side browns up nicely. Slice the bacon into small pieces and put it into the pan to cook. Stir and allow it to brown, then add the onion and mushrooms. When everything is sauteed up nicely then stir in the cream of mushroom soup. When it is mixed up well, then toss in the cubed up cheese to melt. Take it off the burner while the cheese melts. Serve immediately.

I also have create a soup recipe that is alot like this and equally as yummy. If you want that I could add that later.

The other recipe is from my mom's kitchen as well. We were able to visit them for Thanksgiving two years ago and she served this dessert. I fell in love and have made it several times since then. I made it again tonight for my ladies night out. They loved it and I promised to send it on to them.

Pumpkin Crisp

1 15oz can of pumpkin
1 cup evaporated milk
1 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 package butter flavored yellow cake mix
1 cup chopped pecans
1 cup butter, melted

Stir together first 5 ingredients. Pour into a lightly greased 13x9 baking dish. Sprinkle cake mix evenly over the pumpkin mixture. Sprinkle evenly with pecans. Drizzle butter evenly over the top of the dessert.
Bake at 350 degrees for 1 hour or until golden brown. Remove from oven and let stand 10 minutes before serving. Serve warm, topped with whipped cream or vanilla ice cream.

I had forgotten about cowboy potatoes!! I could make a vegetarian version...just no bacon! Or...better...all the bacon on mine...just leave it off Dave's!

Dad read your blog as always and sent me a reminder to fix these for him!! This recipe pre-dates your birth-it was in a newspaper in Big Spring, TX.
I am going to make to pumpkin crisp as well.
