-18 degree weather...

calls for some really really good soup recipes. Don't you agree?

Here is the Cowboy Potato Soup recipe I promised some of you...

6 strips of back (diced)
1 onion diced
3-4 potatos cubed
chicken broth to cover (4-6 cups)
1 can cream of mushroom soup
garlic, butter, salt and pepper to taste
shredded cheddar to top the soup

Brown bacon. Add onion and brown slightly. Add potatos, seasonings and broth. Cook uncovered, on low heat for about an hour or until potatos are tender. Add mushroom soup. Serve topped with lots of shredded cheddar cheese.
Yum!

Cream of Wild Rice Soup

1 large onion, chopped
1 large carrot, shredded
1 celery rib, chopped
3-4 T butter or marg
1/2 cup flour
8 cups chicken broth
3 cups cooked wild rice
1-2 cubed cooked chicked breasts
salt, pepper, rosemary

In a large saucepan, saute the onion, carrot, and celery in butter until tender. Stir in flour until blended. Gradually add broth. Stir in the rice, chicken and any spices. Bring to a boil over medium heat, continue to stir until thickened. Cook 3-5 minutes longer and serve.
